Soup recipe

This is one of our favorite easy to make soups. I didn't think I would like it when I tried it but I love it!

Taco Soup

1 can corn
2-3 cans beans- we usually use black beans, white beans, and pinto beans
1 can chili
1 can tomato sauce
1t taco seasoning (or more if you just love this stuff)

Throw it all in a crock pot for a few hours on low(or less hours on high) We love to put grated up cheese and sour cream in it. We also really love it with french bread.

October- Soup Recipes & Halloween Fun!

I think October is the greatest time for soup! It is getting cold and curling up with yummy warm soup is great for yucky weather! Plus crock pot soups are awesome for busy days! So what is your families favorite soup recipe? I know A lot of people also love chili this time of year. I am not a big chili fan, but chili recipes are welcome too!

October also brings Halloween. Do you have any fun Halloween food you like to make? Or any super fun traditions? We would love to hear about that too!

More ground beef recipes

Porcupine balls

1lb hamburger
mix in-
1/4 C tomato soup
1t salt
1 slightly beaten egg
1/2 C rice
pepper
(onions are always optional to me but I figured I would mention the original recipe does call for 1 small chopped onion)

shape into balls and brow. mix the rest of soup in 1 1/2 C water. pour over meat balls & simmer for 40 min.
Our alterations: we do one pan with oats instead of rice because of food allergies- it just has a little more of a meat loaf flavor and cooks in less time. we don't do actual balls well. so we mix up the meat and cook the whole thing in the sauce, adding more sauce as needed. stir often until gr beef is brown and rice is cooked!



Meat Loaf

ground beef
1 egg
oats and ketchup to taste

cook 350-375 until middle is brown. you can add anything you like on a hamburger for variety! dill, mustard, shredded cheese, onion, whatever you like!



Hamburger roll ups

cooked ground beef
shredded cheese
bread dough

roll out bread dough like you are going to make Cinnamon rolls. Sprinkle ground beef and cheese all over the bread. Roll up and cut into around one inch rolls-like Cinnamon rolls. cook 400 for 10-12 min



Sloppy Joe's

1/2 t garlic salt
1 t mustard
3/4 C ketchup
3t brown sugar


Sloppy Joe's #2

2lbs gr beef
1 can tomato soup
2T brown sugar
1 1/2 worchestersire sauce
1 1/2 mustard
1/2C ketchup
1/2 t chili powder (optional)
1 t salt
1/2 t curry powder (optional)

Ground beef? There's southwestern pie: beef + tomato soup + corn with a biscuit or cornbread topper. Also stroganoff: beef + cream of mushroom (or celery) soup + sour cream served over noodles. Asian "noodley beef" stuff: pack of frozen veggies + beef + broken up package of ramen + flavor packet.

Zucchini Recipes

Stir Fry

Slice up Zucchini and crook neck squash and cook
add cooked broccoli, browned gr beef, peas, and any other veggies you like!
Stir all together, add soy sauce, cook until all ingredients are cooked or warmed through.
serve on rice or noodles

Zucchini Bread

mix-
1c sugar
1C oil
1 C br sugar
3 eggs
2C grated peeled zucchini
mix-
3C flour
3t cinnamon
1/2t salt
1t soda
1/4t baking powder
1/2C nuts (optional)
mix 2 parts together. bake 45-60 min, at 350, in greased loaf pan

We have had Zucchini Pancakes for dinner a couple of times and love them! Here's the recipe!

2 c. grated zucchini
1/2 c. parmesan cheese
2 eggs, beaten
5 Tb. flour
1 1/2 Tb. finely chopped onion (opt)
1 Tb. oil
1 tsp. garlic salt
2 dashes paprika

Mix all ingredients together. Drop by teaspoonful on hot griddle and cook over low heat until golden and crisp on both sides. For extra flavor serve with a small dollop of sour cream.

Chicken Recipes


Easy Baked Chicken


chicken
Parmesan cheese
Italian season bread crumbs
butter

place chicken in baking dish. Top with a few pats of butter then sprinkle Parmesan cheese and Italian bread crumbs. bake 350-375 until done. This is easy to make and bake- do not try in an actual easy bake oven. :)

Teriyaki Chicken

4-6 chicken breasts 1Tbsp lemon juice
3/4 C soy sauce
1 tsp garlic salt
2/3 C sugar 1 tsp ginger

put all ingredients in a large pot cook on med heat until done about 45 min. I usually throw it in the crock pot on low for the afternoon. The sauce is great on rice!


Sour Cream Chicken


sour cream
garlic salt
Ritz crackers
chicken

sprinkle garlic salt on chicken breasts. Then cover the chicken with sour cream. Next crumble ritz crackers (or the cracker you like) on top. Bake 350-375 until done!

Boiled Egg Recipies

Potato Salad

6 potatoes
6 boiled eggs
2 dill pickles
1/2 C mayo or miracle whip
1 1/2 T Mustard
1 1/2 T milk
salt and pepper
garlic powder or salt
paprika

Boil potatoes until firm soft. Cut up potatoes, eggs, pickles and stir together. mix mayo, mustard, and milk. add to potatoes. season to taste and top with paprika.

Easter tradition

We start a jar a few weeks before Easter that Is for nice things we do. Each time someone does something kind or extra, they get to put a bean in the jar. Then on Easter the Easter bunny turns the beans in the jar into jelly beans. The kids try really hard to do kind things this time of year because they want lots of jelly beans! -Christine

Another tradition we love at our house is when you are ready to eat the boiled eggs from Easter you can't just peel them and eat them. You have to roll them at each other. So 2 people face each other like you are going to roll a ball to each other and roll the eggs at each other at the same time. the object of the game is to get the 2 eggs to crash into each other as many times as you can until one egg is defiantly the looser. The winner gets to roll the next person's egg, the looser gets to peel and eat the egg! - Christine

Yummy chocolate eggs

Here is the dreaded Chocolate Covered Peanut Butter Easter Egg recipe. This recipe has me reconsidering my my weight loss goals for the year, "maybe I don't need to lose QUITE so much weight..."

1 c. crushed graham crackers, 1 c. powder sugar, 1 c. peanut butter, 1 TBS melted margarine. Mix, shape, freeze, and dip. Enjoy!!

Dip in melted chocolate chips/chocolate flavored almond bark/white chocolate/real dipping chocolate/whatever.
